Choc chip Walnut Cake - AGAIN!

This is one of my BEST bake so far for a FULL size 4 eggs butter cake!
I am so happy and excited ...

Just out of oven, very minimal cracking on the top!
I guess if I didn't go poking around to test for doneness, the cracking might not occur!

I learnt that I really need to increase the baking time and power for this particular cake!
45 minutes of 350C
20 minutes of 360C (Top covered with aluminium foil)
10 minutes of 330C

I guess I still need to adjust the power and timing to a perfection but for now this is one of my bestest full size Choc chip Walnut Cake!

'Purrrfect'!

Recipes take from Baking Cottages : Indonesian Walnut Butter Cake .
(Highlighted in red are changes I made ...)
Ingredients:
250g Butter
200g Sugar (Reduced to 150g)
4 Eggs, separated
200g Plain/Cake flour
4g Baking powder
30g Chocolate chips (Increase to 70grams)
150g Walnuts
Vanilla essence (1 tsp Vanilla Extract)

Method:
  • Prepare and line a 9-inch cake pan (8-inch square pan, butter the bottom and sides of pan).
  • Chop walnuts and lightly toast in an oven for about 5 minutes. Be careful not to over toast it.
  • Sift flour and baking powder. Set aside.
  • In a large mixing bowl, creamed softened butter with half of the sugar (in my case 75g) using an electric beater until light and fluffy.
  • Add egg yolks, one by one into batter and cream till well mixed.
  • Add in sifted flour mixture slowly. (I mix manually before using the electric mixer.)
  • In another mixing bowl, beat egg whites using an electric beater. Add the other half of the sugar slowly and continue beating until the egg white reaches stiff peak.
  • Add toasted nuts and chocolate chips into the cake batter.
  • Fold in beaten egg whites into the cake batter, in two to three additons, until egg whites is well-incorporated into the batter. (Add toasted nuts and chocolate chips into the cake batter right after this step.)
  • Pour batter into prepared pan. Bake in preheated oven at 160C for about 50 minutes to one hour. (Took me 1hr and 15minutes.)
Our 2nd butter cake within ONE WEEK, fat die us!

I think Hub is so sick of butter cake, maybe I can try a green tea cake after we finish this butter cake!
