Hub 33 Bday Pt01 - Fish head curry!

OMG OMG OMG, one BIG fish head for just Me and HUB!
This is such a big fish head, weighing about 1.2kg ...
Usually when we eat out with friends, we have to 'share' and usually only HALF of fish head maybe with at least 3-4pax. Imagine ONE BIG Fish head for us! Only one word can describe, "SHIOK"!
I only added Eggplant and Okra to my Fish head curry because I am constraint by the size of my wok! In the end I only added, half of the eggplant too! Oh I add in Beancurd Sheets too.
@ the Supermarket, there are only 2 choices and I chose the smallest fish head which is a ROCK COD HEAD, almost similar to Red Snapper; ALMOST.
Look very smiliar right?
This is the premix I used.

I boiled the fish before braising it in Curry and Veggies.
NO ONE fights the fish eyes with me, and I have TWO to myself.
Having Fish Head Curry in Texas?
I don't think there is any place selling this dish, or maybe I just don't visit much restaurant here.

But Hub is one happy man with a happy tummmy!

HCP - Shortcut Indo Style Grill Chicken?

ANOTHER HCP Chicken, hahaha~
Althou my HCP is damage but I have another side of the pan to use!

Hubby once had a BBQ grilled chicken rice, from a Indonesia Food stall and fell IN LOVE with the stall! I researched and realised Indonesian Grilled Chicken has alot of 'STEPS'! Firstly have to braised the chicken in a mix of Curry spices and then grilled them! That is TOO MUCH work for a 2 pax meal! Plus we didn't have a proper BBQ Grill. 

So maybe a shortcut one will do?
I slather the chicken with Olive oil, and marinate with Curry Powder, Paprika, Tumeric and Cumin powder. I shall research more and maybe marinate with the 'REAL' stuffs the next time.
The burnt part is REALLY the BEST part!
Grilled them in HCP and cooked for about 15minutes.
When the chicken is grilled to satisfaction and cooked, slather KECAP MANIS on the grilled charred chicken! If need to, can slather more after dished on plate too ~

Favorite BKT spices ...

Most of the Bak Kut Teh Spices Packet we can get here are mostly Malaysia Style or Taiwan Style which has a very heavy herbal medicinal taste and  we prefers the Singapore clear soup style.
Stated on the packaging, "不含药味" meaning no 'Medicinal' taste!

Simple, tasty!
But my BKT spice packet expiring soon!

Tokyo Sushi & Asian Buffet Restaurant - Mckinney

Another BUFFET!

Dinner Buffet: 3:30pm - 9:30pm 


Saw this Asian buffet restaurant in a local magazine and it is newly opened!
We wanted to try out the lunch and we have a 15% discount coupon.
When we walked in, the setup is like any typical 'Asian' buffet restuarant.
The selection of food is rather typical, but one thing for sure their selection are FRESH and piping HOT!
Some buffet place we went, we can see the dish is already cool off and has like been in the tray for thousand years! But as you can see all the food are still steaming HOT and look bright and fresh.

These here are the 'western' selection of Baked crabmeat, bacon wrapped, french fries, apple pies and beef pies.
Here are the 'Thai selection' of Curry fish, and pepper pork.
And the below selection are the typical, Chow mein, chow fan, different type of sweet chicken hahaha! The chow mein was a tad dissappointing, tasteless. But well, I am not there for the mein or rice!
What is different from here and other asian buffet? They have SUSHI! And they claim that their sushi are fresh which explains the 'limited' pieces on the trays! So you have to be very lucky to see SALMON sushi! Hub is so lucky, the few times I walked pass, I didn't see ANY at all! And each time, they only serve 3 pieces of fresh fish sushi!
But still the Salmon sushi is FRESH and thick!
The 'bad', I think the rice is NOT Japanese Sushi rice, and I cannot taste the Japanese Vinegar of the rice too; which to me is VERY IMPORTANT! Well for the price we are paying, hmmmm; cannot complain too much!
I loves the fried chicken wings, and their mussels!

The dessert were nice too, well presented and small portion ...
Oh they have ala-carte menu as well.
All in all, nice environment, VERY CLEAN and NEW; hot and fresh food!

Good price for a lazy day lunch ...
And we agree that this is by far one of the best Asian buffet place we have been to, but then the TOKYO aspect is very minimum in the buffet. But then maybe dinner would have been a different story. Usually during lunch time, the buffet has lesser variety as compared to dinner time. 

Maybe if we have a chance we might go try again.

HCP - Cajun Seasoning Chicken Quarter!

This will be the last time I am using my HCP to grill my chicken, *sob sob sob*!
I accidentally burnt my HCP on high fire and placed my chicken when the top is fragile, and burnt out the top. And I didn't realized until I was washing the pan, and there was this patch that I thought was charred skin of the chicken, but it was the top coat of the pan that was scratched/burnt off by the 'chicken'! I bet the 'titanium' coating is either in hub's or my tummy!

In order to console me, Hub has promised to buy me another one on ebay. I didn't particularly enjoying stir-frying on HCP but grilling was TOP notch using HCP as it reduces the smoke and cooking time and gives a good charred result. But we don't always eat grilled stuffs, so we'll see if I ever wanted a HCP again ...
Lather a layer of Olive oil, and add in lots of Cajun seasoning, curry powder, and cumin powder.
And just place it ON the very HOT HCP ...
After 25minutes ...
Looks yummmmy right!
Expensive looking? 
But definitely CHEAP, these chicken leg quarter is about USD1.00 each, a can of bean also about USD0.25 per serving and eggs USD0.20?

Less than $2.00 per servings!!!
and definitely very FILLING too!
I should have added some greens but we are too full ...

Choc chip Walnut Cake - AGAIN!

This is one of my BEST bake so far for a FULL size 4 eggs butter cake!
I am so happy and excited ...

Just out of oven, very minimal cracking on the top!
I guess if I didn't go poking around to test for doneness, the cracking might not occur!

I learnt that I really need to increase the baking time and power for this particular cake!
45 minutes of 350C
20 minutes of 360C (Top covered with aluminium foil)
10 minutes of 330C

I guess I still need to adjust the power and timing to a perfection but for now this is one of my bestest full size Choc chip Walnut Cake!


Recipes take from Baking Cottages : Indonesian Walnut Butter Cake .
(Highlighted in red are changes I made ...)
250g Butter
200g Sugar (Reduced to 150g)
4 Eggs, separated
200g Plain/Cake flour
4g Baking powder
30g Chocolate chips (Increase to 70grams)
150g Walnuts
Vanilla essence (1 tsp Vanilla Extract)

  • Prepare and line a 9-inch cake pan (8-inch square pan, butter the bottom and sides of pan).
  • Chop walnuts and lightly toast in an oven for about 5 minutes. Be careful not to over toast it.
  • Sift flour and baking powder. Set aside.
  • In a large mixing bowl, creamed softened butter with half of the sugar (in my case 75g) using an electric beater until light and fluffy.
  • Add egg yolks, one by one into batter and cream till well mixed.
  • Add in sifted flour mixture slowly. (I mix manually before using the electric mixer.)
  • In another mixing bowl, beat egg whites using an electric beater. Add the other half of the sugar slowly and continue beating until the egg white reaches stiff peak.
  • Add toasted nuts and chocolate chips into the cake batter.
  • Fold in beaten egg whites into the cake batter, in two to three additons, until egg whites is well-incorporated into the batter. (Add toasted nuts and chocolate chips into the cake batter right after this step.)
  • Pour batter into prepared pan. Bake in preheated oven at 160C for about 50 minutes to one hour. (Took me 1hr and 15minutes.)
Our 2nd butter cake within ONE WEEK, fat die us!

I think Hub is so sick of butter cake, maybe I can try a green tea cake after we finish this butter cake!

Home cook - Lunch just for 2! (May 18, 2012)

I planned to do a 2 dishes lunch but I took out and thaw the prawns and forget to throw it into the veggie dish! Hahahaha, so NO CHOICE, I added another dish!

I used HCP for all the dishes here.
I 'overcooked' the fish and the gravy dried up, 'fire' too big!
Arrrrghhhhhh ~
Our usual veggie dish, pea sprout with shiitake mushroom.
And egg with prawns!
Heavy lunch for 2!

Simple brunch - Chilli Okra and Tomato Egg

Since Hub is at home, I try to prepare lunch earlier so that we have a healthier eating habit!
I try stir-frying with Ocher HCP, and I hated it!
The fire is hard to control, and I guess the fire is too high; it sort of burn off all the liquid. Maybe it is JUST ME or I am just not use to using HCP but I can't deny 'Grilling' on HCP is the best because it gives a good charred effect to the meat ...

This is the first time I try stir-frying and also the first time I try doing a Okra dish!
Which explains the 'charred' effect because I didn't really know how to control the 'fire' on HCP.
Tomato egg was overdone too!
I love the way Taiwanese do their Tomato Egg, watery and soft ~
I guess I need to practice more!

Alot of Sun Rain in May

The weather is so unpredictable! 
One minute it is cooling and windy the next it becomes so warm; then you turn your head and it starts to rain! I walked out of the patio the checked out the weather with TOto, and decide to bring TOto out for a run. When we changed and decide to go out it rain so suddenly with the Sun shining brightly!
The raindrops are oddly huge!
Baked a comfort cake again!
Chocolate Chip Walnut Butter Cake
I used my new 7inch Square Pan and the cake turns out good! 
I whipped and folded the eggwhite so well, the cake rises high! But it still didn't baked within the given timeframe. I overbake for almost 30minutes!? Hmmmm, WHY!?
Nonetheless, the butter cake taste yummmieee.

Ocher HCP - Homemade Steak Fajitas w cheats!

My first trial at Mexican 'cuisine'!
But of course not everything is from scratch, alots are cheats actually hahahahaha ...
Ermmmm, at least the meat and salsa are from scratch!

I marinate the meat with salt, pepper, cajun powder and cumin powder; set aside.
Salsa preparation.
Cut and diced the tomatoes.
Diced Onion.
My Salsa ingredient includes : Diced tomatoes, diced Onion, and chopped Cilantro with Lime juice, sugar and salt.
Sliced the leftover onion and also Red bell pepper.
I used my Happy Call Pan instead of our grill!
1 minutes each side, take it and set aside.
After the onion and bell pepper sweats, add in steak and cook some more till desired.
Sliced the steak and toss with the onion and bell pepper.
The rest of the other ingredient ...
My cheats are the Canned chili and Guacamole!
When I first come to USA, I didn't know that their Chili means beans and meat and tasted nothing like our CHILLI back home!

Traditional versions are made using chili peppers, garlic, onions, and cumin, along with chopped or ground beef. Beans and tomatoes are frequently included. The variant recipes provoke disputes among aficionados, and the dish is used as an ingredient in a number of other foods.
I didn't have any ingredient list on hand when I go goes shopping, it was a last minute decision to do Mexican! So this is what we gotten; Sour cream, Canned Chili, Cheese, Guacamole, Fajitas wrap, steak with onion and red bell pepper, and salsa ingredient with lime juice.
VERY COLOURFUL and yummmmy!
Very colourful!
Hopefully I can at least try to prep FRESH Guacamole in my next Mexican adventure! 
But I definitely would like to try at least the Authentic 'MOLE' recipe!
