Buncto - #36 Beef Rendang Curry

Hubs has been requesting for Beef Rendang for days!! Arrrghhh ...
I slow cook the Stew Beef yesterday night with Brahim Rendang paste, easy peasy and done the rest in the morning. A quick and easy lunchbox!

Today's menu : Beef Rendang with Broccoli, sunny-side-up and a hot dog.
Beef rendang looks dry but it should be very tender after slow-cooking on slow overnight!
Hope he likes them!
I am not much of a Rendang fan ...

3 ingredient Meatballs!

Minced Pork, Chopped Parsley and onion~
That is ALL, to these yummy meatballs! I was intending to have it for dinner but Hubs finish them all in one seating before DINNER! But I marinated the Minced Pork overnight of course!

Marinate for Minced Pork : Oyster Sauce, soy sauce, fish sauce, sugar and salt and pepper.

Mix everything and I use a tablespoon to measure every scoop, and pan fry them.
I was thinking it might be too bland because usually I use so more more stuffs in my gyoza or wanton and this is only 3 ingredient but it is surprisingly good because of the very well marinated pork. YUM! Will be preparing more for Hubs lunchbox.

Buncto - #35 Stir fry Fish fillet with Pork floss

The Japanese have their Furikake, the Chinese has PORK FLOSS! Usually I take Pork Floss with porridge and actually I am not a big fan of them but I foundd a small packet in the Asian supermarket so why not try it out with Hubs lunchbox.

Today's Menu - Stir Fry 101 with fish fillet, Cubed carrots and celery and Shimeji Mushroom, Pork floss and Tomato grapes.

This is HOW I DO it!
1) Sliced the fish fillet and soak them in cornstarch mixture and salt.
2) Cook rice.
3) Cubed Carrots, Celery and minced garlic.
4) Add oil to pan, then add carrot, celery, fish and shimeji mushroom cooked till fish done. Add chicken broth/water and seasoning; oyster sauce, Haochi seasong (Sugar & Salt). Boil and add in cornstarch solution to thicken the sauce. Boil and scoop out.
Today's lunchbox looks yummy!
At least it is to MY taste!

Buncto - #34 Prego Sauce with SHORT CUTS!

The fish, minced meat, pork are all frozens and Hubs say he want to eat the chicken chops AT HOME with deep fried french fries! OK, I am only left with all the shortcut options then!

Today's Menu : Sunny side-up, Nuggets, Tyson Anytizer honey chicken, Hotdogs and Pregos spaghetti sauce with Celery and Carrot
The veggies are all hidden in the sauce top with mozarella cheese!
Hopefully the fish got defrozen by tomorrow!

Home Comfort food - Chicken Chop!

Chicken Chop is selling everywhere in Singapore, especially with brown sauce and Heinz beans! The last time I used my chicken leg meat, Hubs say the 'chicken smell' is very strong! So, I marinated the rest with of the chicken meat with; Oyster sauce, Soy sauce, Sesame Oil, Sugar and Salt. And I prepared this very homestyle easy Chicken Chop with the sauce prepared using a Steak sauce!

It feels so HOME.
Just simple pan fry the chicken meat, I used the fat oily thigh ...
I used the leftover oil and add in the Steak sauce to prepare the brown sauce!
Simple but Yum yum yum ...

Buncto - #33 Stir-Fried Glutinous Rice (生炒糯米飯)

Hub's Colleague seeing that Hubs is bringing lunchbox to work daily asked him :

   Hub's Colleague : Oh your wife cook? Where did she learn how to cook?
   Hubs : Youtube!

This sounds so funny but, No joke! I really learn my cooking/baking via youtube and all the cooking blogs online PLUS, fragments of that little bit of vague memories of how my mother used to do things and of course all the 'trials and errors' over the years"!

My mother never reveal the 'WHOLE STORY'. Her teaching is always vague, with a little bit of this, alittle bit of that and 'aga aga' (which meant estimate it yourself!). Even the timings she gave me are 'aga aga'! Everything she taught me is 'agaration' (Estimation)!

I seriously lack confidence and I tell hub if this fails, you won't have lunch tomorrow! I have been looking at this recipe for like 1 year, on and off; always reading about whether to 'steam' or to 'cook in rice cooker' or just stir fry! And I thought the 'steaming' method should be better because the rice would be sticker and wetter that the reason I dare not stirfry them! But the stirfry method seems the easiest!

Today's menu : Stir-Fried Glutinous Rice with Dried chinese sausage, Dried shrimp, Dried Shittake mushroom and Eggs.
I think the stir frying took less than 20minutes! I didn't exactly timed but I think including the slicing of the mushroom, lapcheong and dried shrimp; everything just took 20 minutes!
But of course, soaking of the rice took at least 3hours!

Ingredient : 1 cup of Glutinous rice, 4/5 of dried chinese sausage, 3tbsp of dried prawns, 5 dried shittake mushroom and 2 eggs.
This is HOW I do it!
1. Soak rice for 3 hours (I think I soak for about 6hours!), follow by soaking the dried mushroom for at least 30 minutes or till soft and then lastly soak the dried shrimps!
2. Remove wax from Chinese sausage, and then cubed/sliced them.
3. After all the soakings is done, sliced mushrooms and roughly chopped up the dried shrimps. DO NOT throw away all the liquid from the mushrom and dried shrimps!
4. Break egg and fried them thinly, sliced and set aside.
5. In the same pan, add more oil and fry in this order > Chinese sausage, dried shrimps, mushroom and add about 1/4cup of water from soaking the mushroom then add rice!
6. Keep stir frying until water dry from the pan, and continue to add water from mushroom and dried shrimps.
7. Add more water if both stock finishes and fry till rice soften, lastly add seasoning. I added Oyster sauce and KNORR Hao Chi (All-In-One Seasoning).
I would add Pork belly and peanut the next time I try this again! It is surprisingly EASY and quick not including the soaking time! THIS is definitely a KEEPER! Hubs took EVERYTHING to work hmmmffppp never leave at least a few mouthful for me!!

Buncto - #32 Simple Stirfry and Salted Turnip Omelette

Updated : Hubs love this dish, he says he loves the sauce which I thought will be abit salty and was waiting for him to complain. But he has high compliments!
Fridge clearing time means alot of stirfry to finish all the leftover groceries!

Today's menu : Stir fry cube celery carrots and imitation crabmeat with Salted Turnip Omelette.
Simple and quick within 20minutes not including washing of course!
Simple stirfry with minced garlic, oyster sauce, fish sauce, cubed celery and carrots, imitation crabmeats and chicken stock with corntarch solution to make it slurrry.
I have no more ideas what to do!

Buncto - #31 Salmon with Teriyaki Sauce on rice

Salmon price is rising and it has been sometime since I ate salmon and I LOVE SALMON!
Salmon is the easiest fish to cook because on its own they are so flavourful.

Today's menu : Pan fry Salmon with Broccoli and Tomatoes with Teriyaki sauce on rice.
Looks yummy and colourful!
I wipe dry the raw salmon and sprinkle some sea salt on top and then just pan fry the fish both side.

Teriyaki Sauce Ingredient : 1/4cup of stock, 1/4 cup of water, 2tbsp of Soy sauce, 1tbsp of Mirin and 1tbsp of sugar.

Using the leftover oil from pan frying the salmon to pan fry some minced garlic and sliced onions, add teriyaki sauce and boil. Drenched sauce on top of rice and salmon.

Hubs say the bedroom stinks of fishy stench now, hahahaha!
Get me a BIGGER house and that won't happen!

Buncto - #30 Sweet Sauce Pork Chop with Celery

Leftover pork chops what to do ...

I want to do something that I have not try before and I start digging into my 'Cookbooks' for inspiration and decide on this Sweet Sauce Pork Chop! I marinated the Pork Chop yesterday night so again everything is so much easier tonight and I just have to Flour the pork chop with Tapioca Flour and pan fry the pork chops and prepare the Sweet sauce.

Seasoning for Pork Chop : Oyster Sauce, Soy sauce, Curry Powder, Baking Powder, Baking Soda, Shaoxing wine, Sesame oil and water.
I didn't add any egg and floured the Pork Chop with Tapioca Flour!
Sweet Sauce : Sweet Chilli Sauce, Lea Perry Worcester Sauce, Orange juice Syrup, Sugar and Water.
These looks like Pineapple but they are NOT, these are celery!
I added some Celery so that there is some greens!

Buncto - #29 Fried Beehoon with Crabmeat ...

Going back to Singapore soon in a month's time so right now I am trying to clear out my fridge and I have very limited resouces for 'creative' dish! This is the most basic Singapore breakfast, Fried beehoon!

Today's menu : Chilli Fried Beehoon with Crabmeat, egg and cabbage.
Fried Beehoon to me is 'comfort' food. I feel so 'home' when I eat this dish! It is best match with 'Chicken wings'!
A new lunchbag for Hubs!
Hubs complain people will laugh at him for using such a 'colourful' bag! Hahaha, gosh this is a recycling bag from 'Wholefood Supermarket'! I love the colour, the size and most importantly the price selling @ USD0.80+!

A recent bake - Walnut butter cake!

I baked it in a 8inch based removable baking tin, and the cake came out beautiful!
Love it, looks so professionally baked right out from Bengawan Solo! This time even Hubs love it and finish MOST of the cake by HIMSELF. Usually, Walnut Butter cake is for MYSELF! But this time round I am very careful to let the butter  and egg cool to room temperature, cream the butter and sugar right, baked the walnut and let it to COOL and carefully whip the egg white! Everything was right so the cake came out great!

But Hubs still complain it is a tad dry and not as soft and spongey! Now he compares EVERYTHING to chiffon! "Chiffon is CHIFFON is CHIFFON!"

Arrrghhhh!!!!
I only have ONE TRUE LOVE, Chocolate Chip Walnut Butter Cake!
Yummmm!

I need BETTER handcream!

My hand is REVEALING my age!!

Neutrogena Norwegian Formula just isn't moisturising enough ANYMORE, my hand is so dry I can feel the dryness even after application! Housechore are not really to blame, the weather in TEXAS is freaking dry!

And OF course, my first choice would be L'Occitane Shea Butter Hand Cream but then I really cannot convince myself to get a 5.2oz/150ml 'Shea butter hand cream" for USD28.00! I have to look for alternative and the I remember buying my 'Butter creams' from lurebeauty and I actually finish that few bottle that I last purchase! I LOVE love how creamy and soft these creams are!

And my choice comes down to ...

- Sheamu (Shea + Emu Oil) Hand & Body Lotion 8oz (Oatmeal, Milk & Honey)
- Exotic Butters Body Cream 8oz (Daisy by Marc Jacobs)
- Body Souffle 4.5oz (White Linen Type)

Mainly I want to get the Shea+Emu oil Hand lotion but atlas to even out the 'shipping cost' I guess it is better to get more items!

And all these oils+creams is about USD30+? which equal to ONE tube L'Occitane Shea Butter Hand Cream. I hope they are as good as the 'Branded' L'Occitane Shea Butter Hand Cream. Their shipping kills their deal BUT they have some coupons online to help cover some of the 'shipping cost'! And they send me 3 small samples of their buttercream and some sample packets of their mineral powder.
The lotion seems 'thin' but OILY enough!
My hand is really DRY, and absorbed the oil REAL fast! It helps when they have 'distilled water' in the ingredient! Water helps the oil to be absorb into the hand so much easier!
But too bad I cannot bring the lotion out for use!
My hand feels so much better with so much goodies on them!

Baked Chicken Satay!

I thought this recipe wouldn't work out but it did! And I didnt add 'ALL' the ingredient listed on most websites. I just added; Cumin seed powder, coriander powder, tumeric powder, Kecap manis, sugar and salt. There are alot more to be added like shallots, garlic, ginger,etc etc ; but I just want to do the most basics! It work out though, but the satay was a tad dryer oven-baked!

Ingredient (Estimate) : 1.5 Skinless thigh, 1tsp Cumin seed Powder, 1tsp Coriander Powder, 1tsp Tumeric Powder, 1tbsp of Kecap Manis, 1-2tbsp of Sugar, 2tbsp Tamarind mix with 1/4cup water and dash of Salt.

I cubed the chicken and marinated them overnated
The next morning, I poked them into the Bamboo sticks! Ewwww, my fingers are stained yellowish, use a glove if you are anal about this! Tumeric stain EVERYTHING.
I spray a layer of oil on the sticks and bottom of the pan.
425F/25minutes.
The house smell really YUMMMY!
But it tasted a tad dry to me, BUT it might because it is 'BAKED'.
This is rather easy to prepare for lunchbox in the morning.

Buncto - #28 Baked Chicken Satay with Japanese Potato Salad

I marinated the cubed chicken pieces and prepare the Potato Salad yesterday night. And this morning, I just have to poke the marinated cube chicken pieces into the Bamboo sticks and baked them at 425F/25minutes! Boil water next and prepare the brocolli; and cook some rice!

Today's menu : Baked Chicken Satay, Japanese Potato Salad and Boiled Brocolli.
The marinated chicken just doesn't smell like Chicken Satay!
The Japanese Potato Salad tasted so much better this morning chilled!
Yah I had to dislodge all the chicken for hubs!
The Satay chicken tasted so much dryer baked but nevertheless the 'Satay' taste is there alright!
Now my tiny home smell just like a Satay stall without the smoke!

Japanese Potato Salad - Nippon BANZAI!

Me am Japanese food fanatic, yeah yeah yeah!
Hahaha, this is a MUST ORDER dish when I go to Ichiban Sushi restaurant in Singapore and their standard of this dish varies. Sometime the potatoes salad taste so good you want 2nd or 3rd but sometime it is just 'BLAH'! And Japanese Potato Salad can be use as 'Bento filler' item!

I didn't exactly follow any recipe but the basic would be Boil Potatoes of any kind, Hard-boiled eggs, diced carrots and cucumber (or corn), Kewpie Mayo and Vinegar (Sushi rice vinegar); maybe some salt and pepper! Psssst, Kewpie Mayo is a MUST!
OMG, omg, omgggggggggggg they are GOOD!
Love them, muackx!
I didn't use any exact measurement, just keep on squeezing the kewpie Mayo until the Potatoes mixture can be stir about hahaha! Measurement via TONGUE tasting, kekeke ...

Today wifey me is bery lazy and we had fastfood for dinner! It has been such a long time since we had any burgers!!! I tell you huh, the burgers here in USA is soooo good it is addictive! So both of us really try to REFRAIN very hard eating out because Burgers is the easiest choice to make! But today I succumb to temptations ...

Buncto - #27 Campbell Mushroom soup with Chicken and Veggies!

I had wanted to prepare baked rice for Hubs but he say it is too heaty so I got the inspiration from this 'Chicken à la King' recipe that I see! I didn't have any 'thick cream' at home so I substituted it with Campbell Mushroom Soup! And just drenched the dish over the rice ...

Today's menu : 'Chicken à la King' with diced potatoes, carrots and celery using Mushroom Campbell Soup.
Preparation done last night ...

And in the morning just throw everything in a pot, not bad huh, look so colour in the pot!
At the last minute I sprinkle some Cheese on top of the dish!
*Yawn*, woke up in the middle of the night because TOto was whining to be let out and his whine is relentless!

Buncto - #26 Tokatsu Curry Rice

I prepare the curry with; Potatoes, Celery and Carrot the night before. I also marinate the pork and prep it with flour, egg and panko yesterday night. So this morning was a breeze, I just have to pan fry the Pork cutlet, heat up the curry and cook rice!

Today's menu : Tonkatsu with Japanese Veggies Curry.

Slicing, and cutting the night before allows me to sleep in another 10minutes every morning! I wonder how much Hubs will save if he eat Lunchbox daily?

I brought a new Container for Hubs; Steeltainer Leak-proof Stainless Steel Full Size Container.
Hubs is complaining that the Ceramic Container is very heavy but I am rather 'anal' about the uses of plastic. If there is a choice I would prefer Ceramic, glass or stainless steel but most of the stainless steel lunchbox online are not leak-proof or they looks very flimsy. 皇天不负苦心人, I finally find this Stainless steal container, with plastic exterior and leak-proof container which fit most of what me and Hubs' stringent criteria!

 I just hope the size given is what I imagine it to be ...

I got it off amazon.com for USD16.95!
I hope this is 'light' enough for him!

Matcha Mushipan (抹茶蒸しパン )

Update : Hubs says it was a bit dry and not as spongey. But of course if you compare it to a 'Chiffon' cake! Nothing is softer than a Chiffon! But a Matcha Chiffon is also denser than the usual chiffon! SO UNFAIR! Hahaha or maybe there is too much batter in the HUGE cups? Remind to myself to use a smaller cupcake mold the next time round!
My hubs is CRAZY about Matcha and I wonder WHY!?
I don't really like that 涩涩的味道 ...
So this is JUST for him, Matcha Steam Cupcakes!
I should have used smaller cupcakes mould!
These paper cups are so big, I only have 3 Mushipans (Matcha steam cake)!
But these Mushipans (Matcha steam cake) do look good!
I should have added my leftovers lotus paste in the steam cakes!
Waiting for Hubs to come home and try it out ...

100gm Rice flour ( I uses Cake flour. )
1tsp Baking powder
1tsp Matcha powder
50gm Sugar
80ml Milk
1tbsp Oil
1 Egg

Translate
1. Sift flour, baking powder, Matcha powder together.
2. Beat egg and sugar in a bowl and mix it with a whisk. Then, add milk, oil and mix it.
3. Mix (1) and (2), whisk well.
4 Pour into the cupcake moulds, steam for 15-20minutes.
