Buncto - #19 Teriyaki Chicken with Baked Tomatoes

Moi chipped the back of my two front toothies yesterday *sob sob* and had to go in for a dental job which cost my hubs a whopping USD286 for 2 fillings done! I was so worried the night before, I cannot sleep, eat or cook! But NO WORRIES, everything is back to normal today!

I marinated the skinless chicken thigh the night before and found a baked tomatoes with cheese recipe the night before. Erm good combo? But everything is done in the Oven, so it is minimum washing!

Today's menu : Oven baked teriyaki chicken thigh, Cheese baked tomatoes and Butter marble cake.
Teriyaki Chicken ain't teriyaki chicken without the SKIN huh!
But hopefully the marinating overnight helps with the flavouring of the meat.
Marinate : 1 Tbsp Soy sauce, 1 Tbsp Mirin, 1 Tbsp Honey, 1 Tbsp of Rice wine and a dash of salt. Baked 425F for 35minutes.
Ingredient : Sliced Tomatoes, drizzle with Olive oil and balsamic vinegar, top it off with cheese. Add into oven at the last 15minutes.
And the marble cake which I baked a few days ago, it was too dry. Not all online recipes can be trusted, this recipe even have people saying GOOD. OMG, who is this people!!
I am trying another recipe soon!
Trying to finish whatever is in the fridge and maybe going into 冰皮月饼 soon. Going to look for ingredient this coming weekend, hopefully in time for the Mid Autumn Festival!!
