Buncto - #19 Teriyaki Chicken with Baked Tomatoes

Moi chipped the back of my two front toothies yesterday *sob sob* and had to go in for a dental job which cost my hubs a whopping USD286 for 2 fillings done! I was so worried the night before, I cannot sleep, eat or cook! But NO WORRIES, everything is back to normal today!

I marinated the skinless chicken thigh the night before and found a baked tomatoes with cheese recipe the night before. Erm good combo? But everything is done in the Oven, so it is minimum washing!

Today's menu : Oven baked teriyaki chicken thigh, Cheese baked tomatoes and Butter marble cake.
Teriyaki Chicken ain't teriyaki chicken without the SKIN huh!
But hopefully the marinating overnight helps with the flavouring of the meat.
Marinate : 1 Tbsp Soy sauce, 1 Tbsp Mirin, 1 Tbsp Honey, 1 Tbsp of Rice wine and a dash of salt. Baked 425F for 35minutes.
Ingredient : Sliced Tomatoes, drizzle with Olive oil and balsamic vinegar, top it off with cheese. Add into oven at the last 15minutes.
And the marble cake which I baked a few days ago, it was too dry. Not all online recipes can be trusted, this recipe even have people saying GOOD. OMG, who is this people!!
I am trying another recipe soon!
Trying to finish whatever is in the fridge and maybe going into 冰皮月饼 soon. Going to look for ingredient this coming weekend, hopefully in time for the Mid Autumn Festival!!

Buncto - #18 Sphagettini with Shiitake Mushroom and Prawns

I woke up late and wasn't intending to cook for Hub's lunch but in my brain, I was sure I can finish everything by 9am within half and hour. So I force myself to wake up about 8.35pm, and realised yikes I only have 25 minutes more! And boiling the water took about almost 5 minutes!!

But I still managed to finish everything by 9am and washup done in 10minutes!

Today's menu : Shiitake Mushroom with Prawns Spaghettini, and green grapes.
Ingredient : Olive oil, minced garlic, chopped onion, sliced shiitake mushroom, chopped parsley, deshelled prawns, a scoop of sphagettini water and sphagettini. Sprinkle cheese and pepper on top.

Looks yummy to me, the dish fit the container just nice so I didn't have any extra to try!
Hope Hubbie loves it!

Sushi Party again!

This week, we have had 2-3x of sushi party, hahaha and I am really getting the hang of doing them! It is not as difficult as I think and they are really easy, quick and minimum cleanup.

I will wash and soak 3/4 cup of Japanese rice overnight, and put it to cook the next day morning, but actually a 30 minutes soak will do. Then I goes on to peel and slice the avocado and cucumber and fry the Tamago (egg), and Imitation crabmeat. I just 'dry' fry the crab meat on my frying pan without any oil. Tuna is the easiest, just add Kewpie Mayo.

Half a avocado, 2 crabmeat, 1/2 cucumber, 2 eggs, and a can of tuna.
And WRAP!
But my wrapping skill is still 'Cannot Make It'!
I have 3 combos here; California Maki, Tuna with avocado and cucumber, and Tuna with tamago and cucumber.
It is so FILLING!
But SHIOK, SHIOK!
My Tamago frying skill is getting better, the layer can see wor, wahahaha! I didn't get those rectangular tamago frying pan, just the usual round frying pan.
I get about 3 egg roll from this Tamago recipe.
Tamago seasoning :
2eggs, 1/2tbsp sugar, 1/4tsp mirin, 1/8tsp salt and 1/4tsp soy sauce.
Hubbie says 'Very healthy'!

Buncto - #17 Friday Sotong & Simple Okonomiyaki!

Recently it was just boring Buncto post and no more exciting new step by step dish! I am also trying to clear up my Fridge! Early morning is 'RUSH' hour; me trying to rush out his buncto within 1hour and hopefully this 1 hour  includes the washup and cooling of the dish!

And today dishes took longer because all are fresh dishes!

Today's menu : Chilli Squid, Simple Okonomiya and grapes.
Sliced onion, mom's chilli rempah and Squid.
Flour, baking powder, salt and sugar, egg, water, cabbage and carrot.
Finally is FRIDAY, I can let my brain goes to rest and stop thinking about what to prepare for TOMORROW! And usually weekend is DIM SUM day!

Buncto - #16 Hotdog fried rice!

Just a lazy day and most of the stuffs are frozen so the easiest would be fried rice again! I wonder how some people can come up with different stuffs daily! Erm, seriously some bento blogs I see are so IMPOSSIBLE! I bet these are 'commercial' blog! Just a simple fried rice is so much work! Some people's bento are just full of different type of colour of vegies/fruits just to make their bento look pretty! Yah they do look pretty but tastewise, hmmmmm ...

My thought, JUST NOT PRACTICAL AT ALL!
This is the REAL world!
Today's menu : Hotdog fried rice with frenchbeans and carrot, baked Crispy chicken and Grapes.
All the different veggies, one meat and rice.
Seafood spaghetti tomorrow?

Buncto - #15 Simple Sushi Party!

Hubs has been harping for sushi for sometime now and the last I did sushi, was like 16 years ago! OMG, so long ago? Anyway nothing fanciful, just simple whatever I have at home roll.

Today's menu : 3 different type of sushi roll; Ham, Imitation Crabmeat and Mayo Tuna and Maple syrup chiffon cake.

OMG, it was so much work for the rice! I woke up at 7.30am so that I can soak the rice or 30minutes. And I got to cook 1.5cup of rice which is alot of rice for my small ricecooker! I was so worried the rice cooker couldn't handle the rice. Then I panfry the Tamago (egg), the crabmeat and ham; and finally sliced the cucumber and avocado!

The crabmeat roll consist of crabmeat, tamago, cucumber, avocado and kewpie mayo.

The Ham roll; Ham, tamago, cucumber and cheese.


At the very last minute I decide to finish the sushi rice, I prepare Tuna mayo and did 2 nigiri and even prepare a Tuna Mayo Roll too. These are the leftovers roll!
I prepare the cake the night before; Maple Syrup Chiffon.

Ingredient : 3 Yolk, 35gm corn oil, 1/4tsp salt, 65gm maple syrup, 30gm milk, 90gm cake flour and 1/8 tsp baking powder. 3 Whites, 35gm sugar and 1/4 tar tar.

Buncto - #14 Monday Chicken Corden BLUE (Oven Baked)

Very early in our dating days, I have know that Hubs loves Chicken Cordon Bleu, BUT not alot of eating place sell this dish; only the more 'atas' places prepares them. And if the menu on any restaurant has this dish, there is no need for him to look at others! Oddly enough, there isn't any Chicken Cordon Bleu in the restaurant here that I have been to here.

Anyway being inspired by a FB's girlfriend, I wanted to try it out and Hubs is ecstatic because just last week, the kitchen is serving 'Chicken Cordon Bleu' but looks just like 'Chicken fried steak'! The ham and cheese is not wrapped but layered on top of the chicken!! Hahaha ~

I wrapped the Ham and Cheese and also dip the chicken in flour and egg the night before. So the next day morning, I just layered more breadcrumbs and drop it in the Oven with Asparagus. My 'wrapping' skill is not good enough and cheese is oooozing out everywhere!

I need more practise!
And because he has to use a fork and knife so I use the glassware container!
The slicing would damage the plastic container!
Hub's verdict, not too bad thou the crumbs are not as crunchy but the chicken is more compact and taste wise almost the same as last night when I prepare but the Ham is rather tasteless!
OF COURSE, we use the economical Ham and Cheese! Hahaha ...

Buncto - Fri #13 Just Fried Rice!

I am trying to finish all the leftover veggies that are in the fridge so there you go; fried rice. I can fry a really really MEAN tasty fried rice, muahahaha ...

Today's menu : Fried rice with chicken, french bean, carrot and egg, boil brocolli and sliced cucumber.
The Brocolli and Cucumber made the fried rice look so healthy!
I sliced and chopped this morning and it took up alot of time. I should have done it yesterday night; especially the garlic!
And we bought this furikake to 'spice' up the taste of Hub's food. And we are careful to choose the 'MADE IN JAPAN' which cost DOUBLE but is MSG free! I shrug to think those MIC would be choke full of MSG ...
I can eat Fried rice EVERYDAY!
If only Hubs think this way too!

But this is a successful week of packed lunch with a nice variety.
Throughout this week there is Chow mein, Spaghettini, Flat rice noodles, and Rice.
I have to plan for next week soon!

Buncto - #12 Stir fry chicken with frenchbean

Today I change hub's food container into another abit larger rectangular container with divider but the idea is met with ALOT OF DISAPPROVAL! The larger container is easier for me to arrange food but Hub is complaining the container is too big, the container colour not nice etc etc. Sometime I feel I am married to a 10yrs old kid instead of a 30year old man, I mean the colour; REALLY? Other man would be so appreciative that the wife even bother to wake up to prepare his lunchbox fresh DAILY! Anyway ...

Today's menu : Stir fry Chicken with french bean, white rice with braised minced meat, Tyson honey chicken and Plain chiffon cake
The main today is this stir fry mix veggies with chicken that is done fresh in the morning. Easy 10minutes, slicing and  stir fry.

Ingredient : Minced Garlic, sliced chicken, carrot, french beans, and shittake mushroom.
Seasoning : Oil, fish sauce, oyster sauce, salt and sugar. 
This is last night braised mince pork and mushroom for 'Bak Chor Mee'.
And dessert of the day; Plain Chiffon cake. It tasted like 鸡蛋糕 but lighter, I quite like it!

Buncto - #11 Fried flat white noodle (Kway teow)

Today's kway teow is a kaleidoscope of ingredient that I throw in. The noodle sort of disintegrated when I added in the oil and ingredients, and it become a mess mashy but since I have already started I just made do and try to make it as pretty as I can with alot of different ingredient hopefully it work out in the end.

Today's menu : Stir-fry flat white noodle, Homemade chicken Ham, and boil brocolli. 
Ingredient:
Minced garlic, Fried diced tofu, sliced lupcheong, chives, eggs, Noodle and shallots.
Seasoning :
Chicken broth, soy sauce, salt and suger.

Cross finger, it is edible.

Parboil, deepfry, marinate and steam the KONG BA (Pork Belly)

This is the first time I decide to do ALL 3 steps! Usually, I just braised the Pork Belly and that is easy. I have asked mom to show me how to do the 'STEAM' method but she has put it off like for MILLION of times, and if not it is already done before I wake up! SO obviously she doesn't want to teach me. I have to figure it out by myself. And a gf of mine did it and uploaded it in on facebook so I asked her for some tips and after surfing around this is what I gather ...

My Pork Belly in the fridge, not the best of cut but we shall make do!
Place ginger pieces in hot water to remove the Porky smell!
After dripping dry and removing all the PIG SKIN's hair, I deep fry them!
Almost burnt myself to death, I hate OIL. The oil SPLASHES everywhere, I had to MAJOR clean up and MOP the kitchen BIG TIME! Cursing throughout and hoping all these is WORTHWHILE!
Slice them and marinate with : Minced garlic, dark soy sauce, Oyster sauce, light soy sauce, fish sauce, rice wine, salt and sugar.
Marinate for at least 2 hour, I added some shittake mushroom.
Steam for 1.5hr - 2hr.
When it is done all the 'oil' of the pork is steam out and the meat is so soft and smell so good!

WE actually finish the whole pot of Pork bellies in 10 buns!
I FEEL SO FAT!
But it is so worthwhile, ermmm dieting sooooon?
Hahahahaha ...

Buncto - #10 Mussel Spaghettini

Today's Buncto smells DELICIOUS!
I love garlicky smell.
This is the 2nd buncto with spaghetti, I think I am slowly getting the hang of preparing spaghetti. I just hope that it doesn't get overly dry in the afternoon.

Today's menu : Mussel Spaghetti with parsley and mushroom, Tyson honey BBQ chicken and Chocolate Chiffon cake.
Ingredient :
Spaghettini, minced garlic, chopped parsley, diced mushroom and mussel.
Seasoning :
Chicken broth, Water from boiling spaghetti, salt and sugar.

I sprinkle some cheese on the spaghetti at the end of the cooking!
Minimum chopping and slicing. I diced the mussel as well hoping I can squeeze everything in the small container :p
Rice tomorrow?

100% Cacao Ghirardelli Chocolate Chiffon Cake

I love Johor Bahru 'Lavender Bakery' Chocolate Chiffon most and hope I can find a recipe that can replicate the taste! But sadly this recipe is not 'wet' enough, still too dry for my liking.

The wet batter is TOO THICK, I wonder should I add more milk to make the batter less goeeey. I guess I need to search for another Chocolate Chiffon Cake!
I messed up the ingredient and added tooooooooo much OIL to my (Chocolate and milk) and I have to redo that part! WASTE my chocolate and milk :( . Dangz, my own fault, due to my handwriting. I see 30ML as 80ML of oil and in the end, I had to waste 80ML of oil!!!

Ingredient :
Yolk wet - 35gm Chocolate 75ml Milk, 30ml oil & 3 yolks.
Yolk dry - 55gm flour, 10gm cocoa powder & 1/8 baking powder.
White - 3 egg whites, 1/8 cream of tartar & 75gm sugar.

170C/350F 35minutes
Anyway I need to go on and just be lucky it was a small mistake that is easily salvage!
It was a rather pretty crack

Erm not to my liking ...
But Hubs managed to finish 1/2 of the 17cm cake in ONE NIGHT!!
Not forgetting the 2 small cupcakes!!

He must LIKE it very much ...
