I have tried to do curry puffs before and failed miserably and today I am determined to succeed! There isn't a standard taste, only preferred taste. And I preferred my potatoes mashy and on the sweeter side. I hate curry puffs that had green beans or potatoes that are have big chunks! So with reference to ALOT of recipes online, this is what I came up with of my recipe.
I prepared the filling one day ahead so let's split this post to 2 part!
Let see; I chopped half an onion, one clove of garlic.
Marinate the chicken with 1 tbsp of soy sauce, and a dash of salt.
Boiled 2 potatoes to about 80% cooked and cubed them.
2 tbsp or abit more of Canola oil and fry the garlic.
When the garlic smells come out, throw in the onion and fry till onion transparent.
Add in minced chicken next.
After chicken cooked, add in cubed potatoes next and 3tbsp of curry powder.
I added about a 1tbsp of 'Maggie chilli sauce' for the sweetness, but you can replace it with ketchup or just plainly sugar.
I added 1/3 cup of water but I think I need to add abit more water, maybe I should increase to 1/4 cup!
Add salt and sugar for taste.
Fry till potatoes cooked and water evaporate till dry!
My whole house smelt of CURRY potatoes and moi husband say smell so nice but was so disappointed that he will have to wait ONE more day!
