Homemade Chicken Breast Ham!

This recipe has been on hold for a few weeks because I always forget to buy Chicken breast.  I usually don't take chicken breast because the meat are so dry. But Carol ,author, of this recipe mentioned that the chicken breast meat will be very tender, so I took a risk! The recipe is very simple but the Chicken breast meat have to be marinate in Salt, sugar and pepper for 3 days!

After marinating with the said ingredient, the meat have to be soak in water for another 2 hours! And then use aluminum foil to roll and wrap the meat tight tight!

雞肉火腿約4-5人份

材料:
雞胸肉2塊(約300g),

調味料:
細砂糖1/2大匙,鹽6g(約是雞肉重量的2%),米酒1大匙,
粗黑胡椒粉1/4茶匙,

步驟:
1.將調味料依序加入雞胸肉中,用手將調味料抹均勻
2.用塑膠袋包起來,放冰箱冷藏3天入味
3.醃好的雞胸肉從冰箱取出,放入清水中浸泡2小時(中間換清水一次)
4.用紙巾將雞肉表面水份擦乾
5.將擦乾的2塊雞胸肉切面互相朝內接合,用2大張鋁箔紙緊密包覆成圓柱狀(務必捲緊,雞胸肉才不會散開)
6.用棉繩纏緊包紮好
7.煮沸一鍋水,水量必須能夠完全淹沒雞胸肉
8.將包好的雞胸肉放入沸水中
9.蓋上蓋子再度煮至沸騰後關火,靜置至完全放涼
10.涼透後將雞胸肉取出放冰箱冷藏(還不要打開鋁箔紙)
11.冰透後打開鋁箔紙,切成薄片,可以夾麵包或直接食用
12.冰箱冷藏約可保存5-6天

補充:
1.有浸泡清水的程序,可以將多餘的鹽份去除, 成品才不會太鹹




Chicken ham, about 4-5 servings
Ingredient:
Chicken breast x2 (about 300g)

Seasoning:
Sugar 1/2 tablespoon
Salt 6g (about 2% of the weight of chicken),
Rice wine, 1 tablespoon
Thick black pepper 1/4 tsp.

Steps:
  1. According to the sequence add the seasoning to the chicken breasts using your hand. Rub the seasoning evenly.
  2. Place the chicken breast in a container and Use a clingwrap to wrap them well. Refrigerate for 3 days.
  3. Removed the marinated chicken breast from the refrigerator and soaked them in clear water for two hours (Change water after one hour and continue to soak for another hour)
  4. Use a paper towel to soak up the water from the chicken breast surface.
  5. Place the dry chicken breast toweard each from the inside joint, and roll them up. Wrapped them with two large sheets of aluminum foil. Make sure the chicken breast are tightly rolled into a cylindrical shaped so that the chicken breast will not come apart)
  6. Using a cotton string wrapped them tightly together, going round and round the cylindrical.
  7. Boil a pot of water making sure the chicken breast can be submerged into the water.
  8. Submerged chicken breast totally into the Boiling pot of water.
  9. After placing the chicken in the water, Cover the pot and bring the water to boil again. Right after the water boil, turn off the heat. Put the pot aside to let the water cool off completely.
  10. After cooling off the chicken breast thoroughly. Remove the chicken breast from the water and place them in the Refrigerator (Do not remove the aluminum foil)
  11. When the chicken breast is cool off thoroughly, remove the aluminum foil. Slice the chicken breast to thin slices. Eat them with a piece of toast or direct consumption.
  12. If placed in refrigerator the chicken breast is fresh for about 5-6 days
Notes : The procedure of soaking the chicken breast in water, removed the excess salt, thus the finished product will not too salty
