My First BREAD experience - Hotdog Bun!

I love bread, and I am a BREAD ADDICT. In USA, the bread are always free flow in restaurant and I always stuff myself FULL with bread before the main course come and in the end I always cannot finish the main course! In Sg, I spend ALOT of $$$ in Breadtalk for Hotdog buns. And I have always wanted to bake BREAD!

So I have been researching Bread like for the longest time. I read books, researched online and watched Youtube. It seems so easy but I know it is NOT because I didn't know how the dough feel and look like. So how to start and when to stop!? But seriously the ingredients are so simple, and even if I fail, I will only be wasting TIME and EFFORT right? There are ALOT of recipes and instruction out there; I chose; Sausage Cheese Rolls with Hand Knead Instruction. I think her recipes are very straightforward and especially helpful with the step by step pictorial!

So Let's try!
I had a hard time doing the dough, maybe the milk and egg is COLD! So I kneaded for like almost 1hr! But like alot of bloggers had say; PERSEVERE!
Sausage Cheese Rolls
Make 12 rolls
300 g Bread Flour
5 g Instant dried yeast
10 g Sugar
6 g Salt
30 g Unsalted butter (soft)
220-230 g One egg plus whole milk
12 pieces Sausage
6 slices Processed cheese slices individually wrapped in plastic (cut into half)
One egg plus 2 tsp of water for glazing
I did but I didn't know whether the texture was the right texture to stop and let into the microwave for proofing.
Anyway I goof my way into this step!
But they Poof up HUGE and I have to remove a few for the 2nd tray!
The changing of tray 'spoil' the second batch!
But that is experience, next time I would know better ...

  • Put the flour, the sugar and yeast in a bowl, whisk to combine, add and salt whisk again. Pour the egg and milk mixture into the bowl.
  • Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.
  • Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes.
  • Add the butter and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.
  • Or you can also try stretching part of the dough, if it can stretch into a thin sheet without breaking, you've kneaded enough.
  • Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).
  • Take the dough out of the bowl, deflate by touch it lightly.
  • Cut the dough into 12 pieces, roll into a ball and let them rest for 10 minutes.
  • Using a rolling pin to roll the dough into an oval shape, place the sausage in the middle, cut both side of the dough into strips, and place half of the cheese slice over the sausage. Fold the strips alternating the left and right over the sausage.
  • Place the dough on the oven sheet, lined with non stick baking paper (the cheese will melt while baking and some will leak). Preheat the oven to 200°C. Let the dough rise until almost double in size, brush with egg wash. Bake for 8 minutes then reduce the temperature to 180°C and bake for 5 minutes more or until the rolls are golden brown.

Dim Sum at JS Chen, Plano

We finally had our Dim Sum fixed at JS Chen Dim Sum and BBQ restaurant! The Dimsum there not bad wor! We had lunch once and find the food not too bad and had always wanted to come back for their Dimsum but ever since Ranch99 open we did not have the chance to drive down there. But I was firm on my decision to have Dim Sum today!

After the first six dishes, we still ordered another '肠粉!
I still wanted more but ...
This meal cost us about USD32.00 after tax and tips (Averaging US4+ per plate)!
Hahaha, I guess this is enough for now, we can come back anytime when we want to!

Prima Deli taste-alike Waffles!

Everytime I go back to Singapore, this is one of the MUST EAT on my list! And I usually like Prima Deli Waffles 'kosong'! The pandan 'greeny' waffles are more dense and I don't really like it. From random sufing I found this recipe from House of Annie. This To-try recipe has been on my list for at least 1 year, finally I got the chance to try it! And because I do it MY WAY, I can make it as crisp as I like it to be!!

Pink Macarons for Vday?

After the F21 online shopping, I pop into the kitchen to finish what I wanted to do.

It take me about 2 and half hour in total, but macarons is one of the easiest baking to do! The most difficult and time consuming part is maybe the sieving of the almond flour and drawing the circles on the parchment paper, the rest are a swift!
And it took me 2.5hours because I have a small oven, and I had to bake it in 4 batches!
And I don't know how to 'Install' the piping bag, so it took me a while to figure it out, hahahaha! Look, even the 'mistake' drip have FEET! The 2nd minute in the oven, and the feet develop. Unbeliveable!

I be preparing a White Chocolate ganache soon for the filling!
Using the same ingredient from my previous bake, I yield about 34 pieces and each is about 3.5cm.
But I ate 2 in the process, hahahaha! Now I understand why some people are such Macaron Addicts; they are so easy to bake if you get it. But I wouldn't do so much because I won't know what to do with the leftover egg yolks!
Basic Macaron Recipe (as according to the ratio) :
55g Egg whites
60g Almond meal
90g Icing sugar
35g caster sugar

Forever 21 for CNY?

Suddenly I realised I didn't get any 'NEW' clothes for CNY!? Hahaha, I don't know whether these will come in, just in time for CNY. But it is still a good reason to buy some clothes! I am getting F-A-T, hope they fit! My style are usually SIMPLER when I put on weight, Heee ...

I try to prepare Dry Fried Mee Siam but Hubs say it tasted more like Bee Hoon Goreng, but overall it is a thumbs UP! And when we finish all, we want some more!

Sweet Butter Cake!

I surf, research, and choose this recipe from, and prepared the Ingredient!
I have everything that is needed in my fridge, easy!

And it become this, OMG, it is GOOD! Very butter BUT too sweet. This recipe is very simple if you have a good standmixer. There is not much to do, just have to keep dumping everything into the mixer, easy. I guess Hubs have to eat ALOT of Butter Cake from now on! But I have to remind myself to add less sugar. Too sweet for me and half the recipe!

Endless possibilities with Anchovies base Soup

My mom always used Anchovies to prepare her Soup Base regardless of what kinda of Soupy stuffs she is preparing. And this is what I come up with. I prepared the base with Anchovies and garlic only, simple.

The next day I added; Minced pork, glass noodle (vermicilli), cilantro, egg white, seaweed and. sprinkle with prepack fried onions and pepper! For taste; salt, sugar and fish sauce.

Nutritious and healthy; there is the protein, carbohydrates, and the greens!
Simple lunch and dinner on a cold cold day!

A Simple Home Cooked Dinner

With some pineapple leftovers, Hubs say 'Pineapple Fried Rice'. Erm ok, I can try ...
Cut and prepare all the Ingredients in bowls to make for easy, clear access; if not I always forget this or that or too slow and food get burnt. Kekekeke ...
Not very pineapple-ish but still not too bad.
Used mom's chilli paste for this Stir-fry mussel, I just want to eat the CHILLI!
Prepared for 45minutes but I only have 10minutes to eat and got to rush out and fetch my TOto from his Daycamp! Cannot take my time slowly to enjoy dinner ...

Kek lapis - Ugly but edible

I love Kek Lapis! But it is so expensive in Singapore, plus the fact that it is not freshly baked! And I will always buy 2 boxes when I go Batam; the Kek lapis are always baked when ORDER! It is always still warm when we get our boxes of Kek Lapis! Anyway, it is alot of work baking Kek lapis, but I am determine to do it. The Ingredient is cheap and low priced, but the end product; heavenly! My reference was from Bernie's Beatenandbaked and

10 Eggs - USD2.00
All spice - USD3.00
250gm of butter - USD3.99
Condensed Milk - USD2.50

And the rest are existing Baking items!
Anyway I have never seen how a Kek Lapis is being baked, so I learn mainly from watching YOUTUBE's video! It looks easy but when I am actually at it, I am a klutz! It was CLUMSINESS all the way burning my finger, wasting my batter! My first 2 layer is wasted because I didn't know what to expect and I burnt them! That is why my Lapis doesn't has as much layer hahaha! Very disappointed but then again, this is only a small price to pay for not learning from anyone, anywhere!

Kitchen Equipment

It seems like my 'Hobby' has divert from Make Up to Skin Care to Cooking to BAKING!

Baking is a 'expensive' hobby and needed alot of 'Proper' Equipment. And recently I order a PROPER cookie pan like FINALLY! How did I bake so much tarts and cookie with a proper cookie pan huh!? And next week I can baked Bak Kwa for CNY and maybe more pineapple tart?

And I am just back from Joann with me new Piping Tip, coupler and piping bags! Maybe I be preparing some Basic whipped cream fulling for the Macarons tonight!
Julienne Peeler for the carrot, radish and cucumber for 'Lao Yusheng'!
And WAFFLE maker, finally I can find a recipe and prepare Singapore style waffle; my absolute All time Favourite and even in Singapore there are only certain places that offer the waffle with crispy crust!! NOW I can try it out by myself ...

Basic Happy Feet Macaron!

Omg omg omg omg omg, my first try at Macarons and they have FEET! I didn't expect the feet to show because firstly, I don't have a very FLAT cookie baking tray; I always used a lousy OLD pizza pan! 2ndly I didn't have any Piping equipment, I used a cut ziplock bag! And this is the first time I do any piping, it look easy on but it was DIFFICULT to control!

There is alot of recipes online and most recipes are very fanciful, I chose Boulanger a la maison . Her blog has very simple steps and tips and all the steps has pictures for easy reference. She also has a formula for the Ingredient of Macaron! Recommended reading for more tips by

Gap Bag is here, Hautelook AXE!

My gap bag is here, and I LOVE it.
Huge, light and roomy with ALOT of pockets, VERY me!
I have promoted it to be my everyday bag ...
Lucky I didn't procrastinate the buy, not long after, this bag is SOLD OUT!
If not, I will be complaining, complaining until Hubs's ear BLEED! COMPLAINS!
I have ordered a Kenneth Cole Satin Stadium Jacket with Detachable Hood from since 24 December 2010 and I forget to look at the fine print which states that I will only recieved 11 January - 17 January 2011. My bad, so I waited and till 17 January, the delivery date was ALTERED and I have to wait another one week. BY then WINTER is over. I am actually very pissed and contacted Their response, the supplier has not fulfilled their delivery and my jacket is still not with, HOW the hell can their fulfilled the delivery by another 1 week!? Ya they cannot confirm whether I can recieved it after another week wait!

And Initially they waived my Delivery charges of USD7.99, but after I complained; they offered to give me a USD20.00 voucher if I prefer to wait for my order and in any case they cannot fulfilled they will refund me in total.

NAH, by the time the jacket arrives, winter is over and I have to keep somewhere the jacket for another year. SO I AM PISSED and I cancelled the order! Hopefully I see the refund to my card soon! Bad way to do business, bad experience so I won't buy from them ANYMORE!

2011 - Pineapple Tart II

This time round, I split the baking into 2 parts; the filling and the actual baking.

I spent a full 3-4 hour standing in the kitchen preparing the Pineapple Fillings on Friday. And this time round, the Pineapples that I bought are HUGE! I grate the pineapple till I want to give up and surrender, but I persevere. And was quite satisfied with the result. This time the colour is brighter and nicer and not as sweet!

On Saturday, I spent about 4hours preparing the dough and rolling all these tarts! I think I gotten about 90 tarts. I am more accurate and the tarts actually look very consistent in size and colouring!

I used Lurpak Danish Butter, and the dough of the tart really tasted more buttery. So is it because the butter is 'SALTED' or is it due to the BRAND of the butter? We won't know till I try another Not as branded unsalted version?? This time round the WHOLE HOUSE smell so buttery, so yummmy smelling ...

I used 1 tsp of Pineapple filling, with 1tsp of Dough.
So the dough is so thin it literally MELT off and it is almost all Pineapple filling! Hubs commented that this time round it really tasted so much better than the first time that I baked it due to the 'Buttery' taste and the size of the tart is smaller so easier to just pop it into the mouth!

These shall be packed for CNY!

Mian Jian Kueh (面煎馃)

Saw this recipes with pictures on Kitchencapers' Forum and decide to try my hand because they have the simplest recipes; all the basics that I had at home! But of course, I have to research abit and the simpler the recipe the better. And I used Piggy's Cooking Journal's version.

Usually I eat Mian Jian Kueh only at 'Pasar Malam' and I don't really like it because the peanut filling is always so LITTLE, and the advantage of eating at home; I can add as much peanut as I LIKE!

Cookbooks bought ...

I love cookbooks that have alot of pictures and will only buy those that have Pictures of the Dishes or Step-by-step Pictures! And all these are collected over the years in USA in Borders especially when they have the 30%-50% discount coupon available! And some of these Cookbooks, after clearance is only USD3.99 or USD2.50! But too bad the cookbooks here don't have the usual 'Singaporean' or 'Malaysia' Cookbooks. Mostly are categorise under 'Asian' or 'China'! And the more popular 'Asian' Cookbooks are Thai, Vietnamese or Indian.
Anyway I seldom do the dishes on these books, I only take them as reference and 灵感!

My first Snow in Texas

The day I tried my hand on baking, Pineapple Tart, which is very STRESSFUL for me and it SNOW in Texas. There was alot of commotion by Hubs and Toto, but I am in the kitchen stressing out! Hahaha, so in the end I cannot really 'ENJOY' the winter because I have to stir the Pineapple filling, roll the filling, rub in the flour, roll the Tart and look after the Oven's fire! But enjoy the pictures ...

A waste it didn't happen on X'mas Day!
It is always SO EXCITING to see the first SNOW! We have been waiting for the WHOLE night for the sky to fall snow but eventually it did in the afternoon. So exciting!!

Pineapple Tart - Finally!

After days of researching, reading, comparing recipes online everywhere!
I finally decide on the recipes used by The Little Teochew who adapted it from Delicious Asian Food.

Since young I have watched mom baked Pineapple tarts but she has NEVER ALLOW me to TRY or TOUCH. And the only thing she allowed me to do is to 'Grate the pineapple' which I hate or 'Stir Fry the Pineapple'; which I hated too! So everything done here today is from researching online watching YOUTUBE and very very vague memories of what my mother had allowed me to watch! The final product is not as 'attractive' as what I imagine it to be but for home consumption, I think it is alright. Plus this is my FIRST TRIAL, have to 'pang chance' (forgive me) abit!

Why grate Pineapple?
Because you want to feel the Fibre of the pineapple from each bite!

Went into the site without having intention to get anything because I am not a big fan of GAP. But but but, I actually see this bag which is soooooooooooooooo ME! Women is always in search of the 'Best' useful bag, and oddly for me; the bag that I used MOST are not the bags that I LIKE most! And the funny thing is usually the bag I used most are not those 'Branded' bags but rather FUNCTIONALITY win "Designs and Brand" hands down! So I gave up the Kate Spade and chose this ...

Simple Chocolate Chip Cupcakes

Finally hubs unboxed the new oven, and he says must try out whether the oven is working or not. SO I make used of the most recent purchase recipe book; Perfect Cupcakes, cookies and muffins. I chose the first page, and the easiest plus I have all the ingredients on hand! We have dessert at night ...
No frosting, I think it will be too sweet, but HUBS will love the frosting.
Cupcakes turn out perfect; just the way I imagine it to be! But my cupcakes, really looks like muffins hahaha! I always thought cupcakes is FLAT top, and muffins will poofed up. Hmmmm something wrong with me or the recipe? But I like the portions of the recipe, just nice 8 small cupcakes ...
